Meet Our Team

Owner / AquaculturistCarlton Yentsch

Carlton's roots stem from Boothbay Harbor, Maine, where he grew up with a strong aquaculture background. Well-known in the community, he worked as a lobsterman for 30 years in Boothbay, before pivoting and starting Ebenecook Oyster Farm. Carlton also develops and builds houses in the off-season. When it comes to oysters and the region, he hopes to educate and protect the coastal environment he's known and treasured for many years, while bringing the highest quality oysters to Boothbay and beyond.

Co-OwnerDr. Clarice Yentsch

Dr. Yentsch is a scientist, author, education and museum professional, and community benefactor. As a scientist, she pioneered the use of flow cytometry to investigate marine phytoplankton and co-founded Bigelow Laboratory for Ocean Sciences. Clarice believes that mentoring, learning and teaching are all interwoven and she has dedicated her life to sharing her discoveries with the world around her ~ the ripple effects of which are far and wide and still carry on at the expanded Bigelow labs now located in East Boothbay.

Co-Owner / FishermanColin Yentsch

Colin has been living and fishing in Boothbay since he was a kid. In his youth Colin got into the fishing business on board several commercial fishing boats. After guiding in Key West, Florida, he came back home to start his family and for 20-some-odd years Colin tuna fished as his primary income. Now he continues to run fishing charters off the waters of Boothbay Harbor while working alongside his brother Carlton taking care of the oysters.
